Just a question one of my staff members said she had the best iced coffee she had ever tasted and it was made using DaVinci Frappease Base. What is this and how does it work?

That is likely to be the Iced Espresso Frappe, the DaVinci Gourmet Frappease is a neutral base that can be used in many drinks, it creates a creamy texture to the drink.

Here is an Iced Espresso Frappe recipe.

Instructions : To make a 480ml beverage you firstly need to place 1 x 480ml cup of ice in a blender with 100ml of fresh & cold milk. Add the DaVinci Gourmet Espresso Coffee Shot to a blender. Lastly, add 1 scoop of DaVinci Gourmet Frappease Powder and blend for 25 seconds. Pour into a serving glass and garnish. Serve with a straw.

Ingredients : Cubed Ice – 480ml Cup (filled), Milk – 100ml fresh, Coffee Shot – Espresso (30mls if using coffee shots), Frappease – 1 scoop 40g

Can I use Frappease base in a slushie machine to make iced coffee and iced chocolate?

Yes, Frappease can be used in a slushie machine.

Making Iced Chocolates, a Sauce would be better than a powder as you will not get the gritty taste in the drink.

The ratios are:

1.3 litres of Water

2.7 litres of Milk

1 kg of Frappease

Chocolate Sauce to taste (minimum of 500ml and adjust accordingly)

Making Iced Coffees the ratios are:

1.3 litres of Water

2.7 litres of Milk

1 kg of Frappease

750 ml of Coffee Shot Syrup (Flavour to taste with Caramel, Hazelnut, Vanilla or just use the straight Espresso)

How to make a Chocolate Raspberry Mousse with DaVinci Gourmet Raspberry Classic Syrup?

Chocolate Raspberry Mousse

Chocolate and raspberry are a classic combination of flavours using the DaVinci Gourmet Classic Raspberry Syrup.

1/4 Cup DaVinci Gourmet Raspberry Classic Syrup
2 eggs, separated
120 g semi-sweet chocolate, melted
1 Cup heavy cream


Finely chop chocolate.
Melt chocolate in a double boiler; set aside.
Bring DaVinci Gourmet Raspberry syrup to a simmer in a small saucepan.
Slowly whisk warm raspberry syrup into egg yolks; strain.
Whisk yolk/syrup mixture until light and fluffy.
Fold melted chocolate into yolk mixture; set aside.
With an electric mixer, whisk egg whites until soft peaks form.
Fold egg whites in to chocolate mixture 1/3 at a time.
Whip heavy cream to soft peaks.
Fold cream into chocolate mixture 1/3 at a time.
Once you are done folding, spoon the mousse into serving dishes & refrigerate for at least three hours before serving.
